Paul started oyster farming in New Zealand at the age of 17. He purchased his first oyster lease at the age of 18, farming the big pacific (crassostrea gigas) for 15 years before moving to Australia, Port Stephens. In 2007 he bought a number of oyster leases farming the pacific, triploid oysters before moving across to Sydney Rock oysters. If you want to stay ahead of the curve, like any farmer it is imperative to stay up to date with new technologies and farming techniques. Paul's focus remains on delivering good product lines and consistent shape in his oysters.
