I have been a proud and passionate chef for nearly 30 years in Australia, Southern England and Highlands of Scotland - making my mark in predominantly high end hotel restaurants. I have been Executive Chef at the Anchorage Resort and Spa here in Port Stephens for the past five years, winning several awards. Having grown up by the beach, I have a deep respect and affinity for the ocean and its harvest so it is a pleasure to be able to impart my knowledge through the recipes I have created.
