Fresh, local and sustainable seafood has been my philosophy for over forty years as a chef. Now, as a retired chef, I concentrate more on being a photographer, having won awards for my work. When I was approached to be the stills photographer for this book, I jumped at the chance as it was a perfect fit for me. My passion for good food, particularly seafood, made it a pleasure to work on. I encourage you to try out the recipes in this book. I know I will.
